Frozen yoghurt bark is one of my favourite snacks to prepare because it’s healthy, sweet, tasty, beyond easy to make and can sit in the freezer, ready and waiting until your next snack craving hits :) I’ve said it before and I’ll say it again, I love meal prepping dessert!

The fun texture, bright coloured love hearts and sweet taste, also make this frozen yoghurt bark a treat that kids find fun and exciting to eat - a great way to get them to enjoy eating healthy! Plus it’s so convenient. You can come back from school pick-up on a busy afternoon and pull this snack straight out of the freezer for them a minute after you get in the door!


Fun Fact: What is known in Australia and Britain as “jelly”, Americans refer to as jello. Americans use the word jelly to describe what Aussies know as jam!

WHAT INGREDIENTS GO INTO “I LOVE YOU” FROZEN YOGHURT BARK?


  • Yoghurt

    Yoghurt forms the base of this dessert and you can use a variety of yoghurts in this recipe. See the section below “What type of yoghurt should I use?” for some recommendations.

  • Fresh Berries

    I use fresh halved strawberries and some blueberries for this recipe. You can feel free to customise with whatever berries you have on hand. Just make sure that after washing your berries, you do gently dry them, because you don’t want the water drops from the washed fruit seeping into the yoghurt and changing the appearance and texture of the yoghurt around the berries.

  • Jam

    I use a bright red fruit jam to make the hearts on this dessert. See the section below “How Do You Make the Jam Hearts?” for more tips on what type of jam is best for this recipe.

    OPTIONAL:

  • Maple Syrup or Honey

    Depending on what type of yoghurt you’re using and whether it is already sweetened or not, you may like to stir through some maple syrup or honey. I recommend this when using Greek yoghurt.

  • Vanilla Essence

    Similarly, you may also like to stir through a little touch of vanilla essence, if you want your yoghurt to have a vanilla flavour.

Of course neither of the above additions would be necessary if you are using a vanilla yoghurt.


WHAT TYPE OF YOGHURT SHOULD I USE?

You can use your favourite brand of vanilla yoghurt to make this recipe or you can use Greek yoghurt. If using Greek yoghurt, you can stir through some maple syrup or honey for added sweetness and/or vanilla extract for added flavour, according to your preference :)


HOW DO YOU MAKE THE JAM HEARTS?

What makes this frozen yoghurt bark say “I Love You” are the red hearts all over its surface. I use a bright red raspberry jam to create these hearts. I find it is much easier and quicker to apply these hearts to the yoghurt bark once it has frozen, rather than while the yoghurt is still liquid. So I first add the berries to the yoghurt and let it set in the freezer. Then, once it has set, I remove it from the freezer and quickly dollop on the raspberry jam hearts using a teaspoon (see video). The frozen yoghurt bark normally needs a few minutes to defrost before serving, so I like to add the hearts during this time - just before slicing and serving. But you can add the hearts and then put the frozen yoghurt back in the freezer for later :)

It’s very easy and quick to make a solid heart shape with just two dollops of jam (see video) and I also like to draw some heart outlines with the jam too, but this can take a little longer than dolloping on the full hearts.

What type of jam should I use?

I recommend using a bright red jam so that your heart design will have the most impact. A more gelatinous/firm jam is better than a runny or liquid-y jam, as it will hold it’s shape on the yoghurt bark. I use raspberry jam, as I think it adds great colour and the flavour suits this dessert but you could use any flavour jam you like!


HOW LONG DOES IT TAKE TO MAKE?

It takes only 5 minutes to get this snack into the freezer, and then after it sets, another couple minutes to dollop on the jam hearts and slice :)


HOW LONG DOES IT TAKE TO FREEZE?

It takes about 3 hours for frozen yoghurt bark to set in the freezer.


HOW LONG DOES HOMEMADE FROZEN YOGHURT BARK LAST IN THE FREEZER?

Once your frozen yoghurt bark has set, and you’ve added the jam hearts and sliced it, if you still have leftovers, you can store them in a sealed freezer bag or airtight freezer-proof container for up to 3 months.


 
 

PRO STORAGE TIP:

If you return the sliced frozen yoghurt bark pieces to a shallow tray lined with parchment paper and then slide this tray into a freezer bag and seal, this should stop the bag from touching the jam hearts and ruining or smudging their shape when in storage! :)

RECIPE

 

“I LOVE YOU” FROZEN YOGHURT BARK

Serves: 8-10

Prep Time: 10 minutes

Freezing Time: 3 hours

Difficulty: Easy / Beginner

 
 
 

INGREDIENTS

  • 500g yoghurt of your choice (e.g. vanilla yoghurt, strawberry yoghurt)

    If using Greek yoghurt, you may like to stir through:

    • 1 tsp vanilla extra and/or

    • 1 tbsp maple syrup

  • Fresh berries of your choice. I use:

    • 8 strawberries, washed, dried and halved

    • A small handful of blueberries, washed and dried

  • A few tsps of raspberry jam

METHOD

  1. Line a shallow, freezer-proof tray with parchment paper.

  2. Add yoghurt to tray and spread in an even layer.

  3. Arrange strawberries and blueberries on the yoghurt layer and press the fruit in slightly.

  4. Place in the freezer for 3 hours to set.

  5. Once the frozen yoghurt bark has set, remove from the freezer. The frozen yoghurt bark will need a few minutes to defrost a little before eating, so during this time use a small spoon to quickly dollop raspberry jam in the shape of hearts on the surface of the bark. You can also draw some heart outlines with the jam. See above video for reference. If in the time it takes you to draw the hearts, your frozen yoghurt bark has defrosted a little too much, just pop it back in the freezer for a little while to firm up again.

  6. Use the parchment paper to lift the frozen yoghurt bark out of the tray and onto a chopping board. Slice the bark into pieces and serve :)

STORAGE: Store any leftover bark in a sealed freezer bag or airtight, freezer-proof container in the freezer for up to 3 months.
