Plum Parfait

This parfait is also unique because it makes use of 2 different varieties of plums - yellow plum and sugar plums. The contrasting colours of yellow and purple along with the green seeds give a strikingly exotic appearance to this dessert as well as varying flavours.
This parfait is also packed with vitamins and minerals, plus the high amount of protein that exists in both yoghurt and roasted pumpkin seeds adds even more to the health factor of this delicious dessert.
This is a great go-to when you want a snack but don’t want to grab something unhealthy for a quick fix…but you also happen to be busy and pressed for time. The convenience of this recipe also makes it perfect for busy mornings, workdays and especially great as a quick, after-school snack. It’s an ingenious way to get picky kids eating healthy because the bright colours, fun textures and sweet flavour are sure to please! :)
This parfait also happens to be gluten-free and of course, the yoghurt can be substituted for a lactose-free or vegan equivalent so everyone can enjoy!

WHAT INGREDIENTS GO INTO PLUM PARFAIT?
Greek Yoghurt
I use greek yoghurt for this recipe. You could substitute this with vanilla yoghurt or even a high protein yoghurt if you prefer.
Yellow Plum
The first variety of plum used in this parfait is yellow plum. It adds a great burst of colour and fresh flavour to this dessert.
Sugar Plums
The second variety of plum used in this parfait is sugar plums. These have a deep purple colour and as the name implies, are even sweeter than your average plum.
Roasted Pumpkin Seeds
Pumpkin seeds add texture and crunch to this parfait along with the toasted sunflower seeds. I use the Pepita variety of pumpkin seeds - these have been hulled to remove the outer coat and are green rather than white. I buy these seeds already roasted as I find this to be more convenient. However, you can roast your own pumpkin seeds at home if you like. I use roasted pumpkin seeds rather than raw because roasting pumpkin seeds brings out more flavour, creating a more savoury, nuttier taste and crunchier texture.
Toasted Sunflower Seeds
Similar to roasting pumpkin seeds, toasting sunflower seeds brings out a nuttier flavour and crunchier texture. Once again you can buy sunflower seeds already toasted/roasted, or do this yourself at home.
OPTIONAL:
Maple Syrup or Honey
I find the plums sweet enough to balance the tanginess of the greek yoghurt, but if you like some added sweetness and extra antioxidants, feel free to include either maple syrup or honey. You can either stir the sweetener of your choice through the yoghurt first before layering your parfait, or simply drizzle some sweetener over each layer of ingredients :)

PLUM PARFAIT
Serves: 1
Prep Time: 5 minutes
Difficulty: Easy / Beginner
INGREDIENTS
200g Greek yoghurt
1-2 tbsps pepitas (pumpkin seeds), roasted
1-2 tbsps sunflower seeds, shelled and toasted
1 yellow plum (South African yellow plum or Mirabelle plum), washed and stem removed
3-4 sugar plums, washed
OPTIONAL:
1 tbsp maple syrup OR 1 tbsp honey
METHOD
Slice the yellow plum in half around the seed and twist to open. Slice each half in half again to create quarters and twist out the seed. Slice each quarter into thirds.
Slice each sugar plum lengthwise down either side, avoiding the seed in the centre of the plum, to get two halves (see video) Slice the halves into thirds.
If using maple syrup or honey, stir it through the Greek yoghurt to incorporate.
Layer half of the Greek yoghurt into a serving glass. Top with half of the roasted pepitas, half of the toasted sunflower seeds, and half of the chopped yellow and sugar plums.
Repeat to create a second layer.
Serve and enjoy :)
