Guacamole Dip with Corn Chips

This famous Mexican dip is renowned the world over for its distinct green colour and great flavour. And guacamole is one of those recipes that just couldn’t get any simpler. All you have to do is chopmashmix…and it’s done! This fresh and colourful crowd favourite is ready to serve in a matter of minutes.

Plate it up alongside some crunchy tortilla chips and you’ve got one of the best, most iconic food combos in history.

WHAT INGREDIENTS GO INTO GUACAMOLE?


  • Avocado

    The main ingredient in guacamole is of course, avocados! They give the dip it’s vibrant green colour and creamy texture.

  • Tomato

    I dice my tomatoes before adding. This ensures beautiful, little bites of sweet tomato flavour are distributed throughout the guacamole. It also makes sure there is no wateriness, since most of the moisture seeps out of the tomatoes onto the chopping board as you cut.

  • Red Onion

    Gives a nice bite of extra flavour and added colour. Some people prefer the milder brown onion but I find with the ratio of ingredients I use in this recipe, the red onion flavour isn’t overpowering at all and would definitely recommend using it. I also recommend dicing the onion, to once again ensure that the flavour is evenly distributed throughout the dip.

  • Coriander a.ka. Cilantro

    The perfect garnish for guacamole. Also the addition of coriander in the guacamole itself provides another hit of bright green colour as well as a mild herbaceous touch to round out the flavour.

  • Garlic

    It’s always a good idea to mince your garlic so you don’t end up with big chunks of it in your dip.

  • Lime Juice

    It’s always best to use the juice of a fresh lime (not store-bought lime juice) but if you don’t have any on hand you can substitute with lemon juice instead.

  • Olive Oil

    I opt for using extra virgin olive oil in this recipe.

  • Salt and Pepper

    Don’t forget the seasoning! Like in any savoury dish, it’s important to finish off with just a little seasoning to accentuate those bold flavours! :)

OPTIONAL

  • Jalapeño Pepper OR Chilli Flakes

    You can skip the heat in this recipe if you want to make it more kid-friendly or enjoyable for those who don’t love hot/spicy flavours (important to keep in mind when you’re planning to serve at a party or get together with many guests).

    I find guacamole still has fantastic flavour even without the added heat, but if you like you can always feel free to add some jalapeño pepper or chilli flakes to make it a little more spicy! - see recipe notes for quantities.

 

Important Note: You should dice your onions and tomatoes and mince your garlic, so the ingredients can be evenly distributed throughout your guacamole and you can get a little bit of every flavour in each bite - as well as avoid big chunks of garlic or onion that could be overpowering :)

 

HOW LONG DOES IT TAKE TO MAKE GUACAMOLE?

Including the time it takes to dice your ingredients and deseed your avocados, it still only takes less than 10 minutes in total to throw together this easy and fun side! j

IS GUACAMOLE A HEALTHY SNACK?

Yes!

Literally every ingredient in guacamole is healthy. Unlike most snacks it’s not filled with excess added sugar; Instead it’s packed with vegetables and fruits (yes, strange as it may seem…tomato and avocado are both technically classified as fruits!).

Plus, guacamole also features super herb coriander and the health benefits of uncooked extra virgin olive oil!

So with that powerhouse combination of fresh ingredients you’ve got one nutritious and delicious snack!

HOW CAN I SERVE GUACAMOLE?

Guacamole is more than just a dip! You can do so much with this yummy mix, like:

  • Add it to your nachos or tacos

  • Serve with baked potatoes

  • Spread it on toast and wraps

HOW TO STORE LEFTOVER GUACAMOLE AND KEEP IT GREEN!

Much like apples if left out for too long after being sliced, guacamole is prone to turning brown - so it’s one of those dishes that’s certainly best eaten right away and that is what I recommend as it will have the best quality in terms of texture and flavour when eaten fresh.

However, if you do end up with leftovers that you’d like to store, I have been told of 2 ways that you can help stave off the inevitable browning for a couple days. I haven’t tried either of these methods myself as I’ve never had leftover guacamole to store but I have been assured that they work, so if you give these a try and they work for you or if you know of another way to preserve guacamole while storing, let me know in the comments!

  1. Store your guacamole in an airtight container in the fridge, with some plastic wrap pressed against the surface of the guacamole to help keep out oxygen and prevent browning.

  2. Pour a small amount of water (about 2-3cm / 1 inch) on top of your guacamole to form a more effective barrier against oxygen, and store in an airtight container in the fridge. When you’re ready to eat, just pour the water off and give your guacamole a stir before serving, If using this method, your guacamole may be able to last longer (about 3-5 days) than if using the first method.


 

Important Note: Guacamole is prone to browning to due to a process called “oxidisation”, so it’s a dish best made just before serving! :)

GUACAMOLE

Serves: 4 - 6

Time: 5 minutes

INGREDIENTS

  • 3 ripe avocadoes

  • 1 large tomato, diced

  • 1 small red onion, diced

  • 1/2 cup coriander (cilantro), chopped

  • 2 garlic cloves, minced

  • juice of 1 lime

  • 1 tbsp extra virgin olive oil

  • Salt and pepper, to taste

    OPTIONAL

  • 1/2 - 1 jalapeño pepper (depending on your preference), seeded and minced

    OR

  • 1/4 tsp chilli flakes (add more or less, to your taste)

    GARNISH

  • Coriander

METHOD

  1. Slice the avocados in half, remove the pit and scoop the flesh of the avocados out into a mixing bowl.

  2. Mash the avocados with a fork to achieve the consistency you desire (chunky or smooth).

  3. Add the remaining ingredients and seasoning, and stir through to combine.

  4. Garnish with coriander and serve.
